SALTIRE FARM
Salitre Farm is located in the renowned Cerrado Mineiro region of Brazil at elevations between 1,120 and 1,236 meters and is run by Gabriel Alves Nunes in partnership with the Siqueira family. The farm was established through the collaboration of two traditional coffee-growing families, both of whom have been producing high-quality coffee in Minas Gerais for generations.
Gabriel represents the second generation of his family, whose company, Nunes Coffee, is internationally recognized for quality, innovation, and sustainability. The farm takes its name from its elevated location and the Mangabeiras River that flows through the land, and stands for modern agriculture in harmony with the environment and local communities.
VARIETY
The Arara variety is cultivated at Salitre Farm – a modern Brazilian cultivar valued for its resilience and excellent cup quality. Well adapted to the climatic conditions of the Cerrado, Arara develops a balanced, sweet, and full-bodied profile.
The combination of altitude, mineral-rich soils, and precise farm management results in coffees known for their consistency and clarity.
PROCESSING
This coffee is processed using the natural method, where ripe cherries are dried fully intact after harvest. Drying takes place over 10 to 12 days on concrete patios, with the cherries turned several times a day to ensure even drying and to prevent unwanted fermentation.
The dry conditions of the Cerrado region provide ideal circumstances for this method. The result is a coffee with pronounced sweetness, a full body, and a harmonious, fruit-forward flavour profile.
