RWANDA SHYIRA FILTER

SHYIRA

This coffee comes from the Shyira washing station in the Nyabihu district of Rwanda – the highest-altitude washing station in the country. It is operated by Muraho Trading Company, founded by two brothers with the goal of improving coffee quality while sustainably enhancing the livelihoods of local farmers.

The region presents challenging growing conditions, shaped by mist, heavy rainfall, and demanding terrain. Despite this, it produces some of Rwanda’s most exciting coffees, driven by a strong community and the dedication of local producers.

VARIETY

The coffee is made from Red Bourbon, one of the classic East African Arabica varieties, known for its balance, sweetness, and complex fruit character. At the high elevations of Nyabihu, it develops particularly clean, elegant, and expressive cup profiles.

The combination of altitude, climate, and careful processing results in coffees with depth and clarity.

PROCESSING

This coffee is processed using the natural method. After careful hand-sorting, only ripe cherries are selected. They are then fermented without the addition of water and left to rest in the fruit for around 5 days.

Afterwards, the cherries are slowly dried on traditional raised beds for 30 to 45 days under the sun, with regular turning and strict quality control throughout the process.
